Taco Soup


  • 2 lbs. ground beef
  • 1 medium onion, chopped
  • 1 jalapeno pepper -seeded and chopped (optional)
  • 2 pkg. mild taco seasoning packets
  • 2 cans corn (16 oz.), drained
  • 2 cans kidney beans (16 oz.), drained and rinsed
  • 2 cans Mexican (Italian, chipotle, etc.) stewed tomatoes (28 oz.)
  • 4 cans tomato sauce (8 oz.)
  • 1 cup+ water


  1. Add the ground beef to the GameDay Cast Iron pot set to medium high heat. Break apart the ground beef while cooking.  After a few minutes add the chopped onion (optional – jalapeno) and cook until the hamburger is browned and the onions are translucent.
  2. Add the taco seasoning mix, corn, beans, tomatoes, tomato sauce and water and stir together. Decrease the heat to a simmer and cook for an additional 20-30 minutes.
  3. Serve hot and top with crushed tortilla chips, grated cheese, slice olives, sour cream, etc.
